This past Sunday was the opening day at Headhouse Market and I happily skipped off to the market despite the deluge of rain. The market was packed and I picked up several great items that I am incorporating into this week's menu plan. As the markets open and my CSA starts up, my menu plan will reflect a more seasonal menu. I'll post what I purchase each week and how we use it throughout the week. The goal is to move to a mostly local diet during farm market season.

Wednesday-- Spinach* and cheese egg white* omelet, grilled asparagus*
Thursday-- Crock pot Potato and leek* soup made with homemade ham stock*, salad and no-knead bread
Friday-- Whole chicken* in the crock pot, Asparagus*, mashed potatoes
Saturday-- Lamb burgers*, baked fries and salad*

Menu Plan for April 13
It is a fairly simple menu plan this week. Breakfast this week is greek yogurt for me and cereal for the kids. DH is opting for his usual eggs and ham steak. Lunch for me this week is a lot of lite egg salad.
I've been doing really well with packing lunches and now that I ride into work I need a smaller lunchbox to fit into my backpack. I finally broke down and bought myself a laptop lunchbox.
Next week starts T-ball season for both boys. This means we will be eating at the park before practice and games start. I need to come up with a list of picnic-type foods for baseball nights. Any suggestions are welcome!
So without further ado here is my menu plan for the week!

Menu Plan This Week
So DH went back to his normal work schedule which is a Godsend for me food wise. I love having him home for dinner but I tend to make his favorite foods and indulge in them instead of staying on program.
So this week, you'll see my WW food plan and *his* menu plan.
Sunday Ham, mashed potatoes, corn and rolls.
I made a huge ham for dinner last night because I can reuse the leftovers for DH this week. I also make mashed potatoes every Sunday because my 3-year-old lives on them.
Monday I am making Miso Soup and Cabbage Salad for me tonight.
I've been eating like crap lately and today it caught up with me. I want something light and easy because I suspect we will be at the playground late tonight. DH will be finishing up the lamb meatballs and rice tonight. The kids will most likely opt for fish sticks tonight although my oldest will eat the Cabbage salad.
Tuesday- I am planning to make Israeli Salad with some homemade pita bread and fresh fruit to go with it. DH is going to have crockpot chili and a salad.
Wednesday- I'll use the ham to make a ham and cheddar stromboli and a salad. For me, black bean and cabbage crispy tacos.
Thursday- Clean out the fridge night.

Indian Lamb Meatball Recipe
Weight watcher points 5.6 for three meatballs. I serve mine over spaghetti squash instead of rice
For the meatballs
1.5 pounds of ground lamb
1 green chili roughly chopped
1 garlic clove chopped
1 inch piece of ginger chopped
1/4 t garam masala
3 T chopped fresh coriander
For the sauce
1 T oil
1/2 t cumin seeds
1 onion chopped
1 garlic clove chopped
1 inch piece ginger root minced
1 t ground cumin
1 t ground coriander
1/2 t salt
1/2 t chilli powder
1 T tomato puree
14 oz chopped tomatoes ( i used a 28 ounce can of whole tomatoes)
To make meatballs put all ingredients into a food processor or blender and process until mixture binds together (this step is key don't skip using a processor)
Shape into 18 meatballs chill 10 minutes
For sauce
Fry cumin seeds for a minute then add garlic, onions and ginger fry 5 more minutes. Combine with rest of the sauce ingredients.
Add meatballs to sauce, bring to a boil and simmer for 25 to 30 minutes or cook all day in crockpot Serve over rice

Weekly Menu Plan A few days late
I meant to get this up yesterday but did not get around to it until this morning. For more ideas check out the menu plans at Chive Talkin at My Joyful Haven.
Sunday Alton Brown's Curried Chicken Pot Pie. This recipe is great for WW because it uses a lot of veggies and it is budget friendly since it takes advantage of frozen veggies. I did not use puff pastry as my topping. Instead I made a light pie crust topping that I found in Cooking Light years ago and love for a fast crust. You can find the pie crust recipe here at Recipezaar. I finished out the meal with corn bread and salad.
Monday I made Alton Brown's Pork Chops I used the basic recipe to brine the chops. I didn't stuff mine since I had thin pork chops. I served it with canned corn and roasted cauliflower and baked potatoes.
Tuesday I am trying a new recipe tonight with Potatoes and Lentils with Curry. I recently found this recipe at a new-to-me site My First Kitchen. I plan to serve this with a big salad and some grapes tonight. I suspect the boys won't touch it, so I'll make fish sticks for them.

Cooking Light's Spicy Asian Noodle with Chicken Recipe Review
I love Cooking Light Magazine and have subscribed for years. I am a big fan of their dinner in 20 section. I got the March issue and realized that I had most of the ingredients for The Spicy Asian Noodles with Chicken.
This recipe is fairly budget friendly although to be fair I live in a large city with access to more Asian supermarkets than you can count. The six-year-old helped me make dinner last night. He sliced the onions, grated the ginger and made the homemade lemonade the boys had with dinner. Lemonade is his special recipe.
Overall, we like the recipe. I bought the wrong chili paste. DH and I just tossed a bunch more hot sauce on ours. I also think that next time I'll marinade the chicken breasts in the sauce to give the recipe a little more sparkle. Also, I prefer my chicken cut into chunks and not shredded. I think it is a texture thing for me.
I would also add broccoli, raw shredded carrots and maybe bean sprouts to bulk up the veggies.
I will say that one of my picky eaters ate this without the chicken. Throwing peanuts on top means he'll eat it. My husband ate two big bowls so that is a good sign as well.
Overall, it needs a bit more tweaking but it is a good base recipe. I figure that it cost me about $5 to make YMMV if you can't access the ingredients at an Asian Market.

Weekly Menu Plan
Jena over at MyJoyfulHaven has started a menu plan blog roll and asked me to consider submitting. I figured it was a good excuse to give my much neglected blog some love. Our life has calmed down a bit so I might have more time to post in the upcoming months.
